Bean Pesto

The Basil in my yard is growing fast. It is time to eat it every day if possible. Here is one of my favorite recipes for basil. It is dairy free, and doesn't contain pine nuts. It is a delicious addition to Raw Spaghetti. My recipe is here. And Raw Spaghetti is a great way to use all the big zucchinis growing in your garden.

Bean Pesto

1 1/2 cups (1 can) great northern beans, rinsed well and drained
1 cup fresh basil
1-2 cloves garlic
2 tsp. nutritional yeast
1 tsp. fresh lemon or lime juice
2 Tbsp. raw pumpkin seeds
salt to taste (optional)

Blend and serve.

Your pesto looks delicious & the serving dish is very eye catching. I like it... I'd definitely stop for some of this little treat. Thanks for sharing the recipe. I'm looking forward to trying it out on the family. If they like it, the credit will all go to you! :)

Basil was one of the few things in my garden that was able to survive the heavy rains earlier this summer. I can't wait to try this recipe.
